Brief description of work:
To deliver a high-end, seated gala dinner for 900 guests for their annual conference. The goal was to create a luxurious dining experience that reflected the company’s brand, celebrated their annual achievements, and impressed high-profile guests—using their own NISA products.

Key Priorities

Our Approach

1. Planning & Logistics

  • We conducted a full site recce to understand the terrain, access routes, and utility needs. Working alongside the venue team
    and power suppliers, we coordinated the temporary build of a fully functional field kitchen, and clear back/storage zones.

2. Bespoke Menu Design

The client requested a themed menu using NISA products and ingredients. We presented tasting sessions, sourcing additional produce from local suppliers and designed a menu that included:

  • A seasonal starter (e.g., heritage beetroot tartare, whipped goat's cheese)
  • A plated main with dual-service options (e.g., slow-braised beef cheek and wild mushroom risotto)
  • A show-stopping dessert trio
  • All dietary requirements were fully accommodated, with custom vegan and allergen-friendly versions.

3. Staffing & Service

Over 100 professional staff were recruited and briefed, including:

  • Executive chef team & kitchen brigade
  • FOH supervisors and trained event waiters
  • Dedicated bar team for pre-dinner and post-dinner service

4. Event Execution

From the build of the kitchen setup to the final service of the evening, we ensured every detail was considered:

  • Courses were delivered on-time, at temperature, and beautifully presented.
  • A satellite bar kept guests refreshed before and after dinner with a curated cocktail menu and top-shelf selections.
